Sauteed Garlic, Onion & Mushroom Spinach

  • 1-2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/4 cup chopped onion
  • 4 fresh sliced mushrooms
  • 1/2 pound fresh spinach
  • Salt and pepper to taste

Heat the oil in a large skillet on medium heat. Cook the onion, mushrooms and garlic until tender.

Add the spinach (the pan will be very full, but the spinach will cook down). Toss and cook just until wilted.

Season with salt and pepper.

Makes 4 servings.
