- 4 cups broccoli florets
- 4 whole large eggs
- 1/4 cup fresh grated cheese
- 1/4 cup dried grated cheese, like parmesan or pecorino romano
- 1 teaspoon olive oil
- salt and pepper to taste
- 1 standard size cupcake tin
- cooking spray or coconut oil
Preheat oven to 350°.
Steam broccoli for 6-7 minutes until soft.
Crumble broccoli into small pieces and mix with olive oil, salt, pepper.
Spread coconut oil or cooking spray evenly in cupcake tin.
Spoon broccoli mixture evenly into 9 tins.
Beat together eggs, dried cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4 full.
Top with fresh grated cheese and bake in the oven until cooked, about 20 minutes.
